Creamy Cajun "Shrimp + Sausage" & Grits

Having a parent who is from the South has caused me to crave Southern-specialty dishes. Becoming vegan, I have been looking for healthier-alternatives to still indulging in some of my favorite dishes. Shrimp and grits was one of them. This recipe is super easy and will have you leaving shrimp alone for good!

1/2 jar of heart of palm (about 3), sliced

2 veggie sausages, sliced (If avoiding gluten and/or soy, I recommend the Beyond Meat sausage. If avoiding just soy, you can use the Field Roast sausages).

1/2 sweet onion, diced

1 red bell pepper, diced 

3 cloves of garlic, minced 

2 tbsp olive oil

1 tbsp Cajun seasoning (I used Old Bay Cajun)

1 tsp cayenne 

1/2 tsp paprika

Juice of 1/2 lemon

Dash of black pepper & salt 

Dash of dried parsley, for garnish (optional)

 

Grits:

6 cups water

1 & 1/2 cups cornmeal 

3 tbsp vegan butter

2 tbsp nutritional yeast or vegan parmesan 

1 tsp black pepper 

Dash of salt 

 

Add olive oil and minced garlic into a saucepan over medium heat.

After a minute, add in the diced onion, red bell pepper, sliced sausage and heart of palm. Sprinkle on seasonings and let sauté. 

Let cook for 4-5 mins then squeeze lemon juice on top. Remove from heat and sit aside. 

For the grits, put 6 cups of water with a dash of salt in a pot over medium-high heat and bring to a boil. 

Once water is boiling, slowly add in the cornmeal. Make sure you’re adding in slowly to prevent corn meal from clumping. 

Continuously stir to prevent clumping and cook for 4-5 minutes or until it is a creamy consistency. Turn off heat and add in vegan butter, nutritional yeast, salt and pepper. Stir in. 

Place grits onto a plate and top with “shrimp and sausage” mixture. Sprinkle on dried parsley if desired
