Green Curry Tofu
I could eat curry everyday for the rest of my life and truly be content. From red curry to green curry, I am obsessed with the Thai dish. Lately, green curry with tofu, zucchini, red peppers and onion. I can promise you that this curry will be a new repeat in your dinner routine once you try it.
Green Tofu Curry
1 zucchini, sliced in half slices
1 white onion, diced
1 red pepper, diced
1 block tofu, cubed
4 cups veggie broth
2 tbsp green curry paste
1 tsp coconut sugar
1 can coconut milk
1 tbsp soy sauce
1 tsp ginger powder
1 tsp cayenne (if you like it spicy)
Rice or quinoa
Cilantro (for topping)
Put 1 tbsp of oil of choice in a pan.
Place cubed tofu in pan. Cook until crispy on each side.
While the tofu is cooking, start cooking rice.
In a pot, place veggie broth, green curry paste, zucchini, onions, and red pepper, ginger, coconut sugar, soy sauce, and cayenne and cook over medium heat.
Placed pan fried tofu in pot with other ingredients and stir.
Stir in can of coconut milk into the pot.
Let cook for additional 10 mins on low heat.
Turn off pot of curry and rice.
